Dram Review: Cadenhead’s Caol Ila 35 Years Old For The Auld Alliance

Nose:

Soft fruits merging into salted caramel that has been folded into multiple layers, the creamy and waxy base is particularly alluring.  Ripe fruits all around as the smoke ever so delicately applies to the scent, in a sense it is almost dreamy.  The spirit draws out this tenderness from the malt, evoking fond memories.

Palate & Finish:

Sublimely delicious fruits, bright colours on the front palate with this certain burst that conveys a platter of flavours, white peaches and candle wax with the malt and soft iodine fusing gracefully.  Gingery and oaky notes applying themselves casually to give a fleeting excitement as the orchard fruits gently chime along to stretch the delivery.

The dram comes to a close by reverting back to the softer notes of honey and barley, with some mint and hint of vanilla.
