Whisky Review: Silver Seal Whisky is Classical Collection Highland Park 1987 “Aida” 28 Years Old

Style: Delicate and Floral

Nose:
Extremely gentle, Parma violets landing on lemon zest. Slipping on a heather honey coat and the floral tone is so delicate and calm. Herbal touches, peppermint gleaming and a scent of fresh, wet green grass and rain drops. Malt with a cereal veil sits at the bottom, an ethereal touch of peat to finish. Sensational aroma. I love it.

Palate:
The cereal side is more apparent on the palate. Slightly chalky. Dry barley, nutmeg and five spices slowly picking up beautiful pear drops then we go back to the herbal greens which is accompanied by a nice fragrant floral touch. Delicate honey stays for a short while, vanilla closing in with a touch of charred caramel. Finishes with mocha and some dark chocolate.

Finish:
70% Dark chocolate, dried fruits lingers on while spices leaving a light trail. Long, satisfying finish.

Thoughts:
Perfect aroma, an absolutely 3 stars nose but unfortunately I can’t rate the whisky just by the aroma alone. The palate is great but not as good as what the nose has promised, it’s a tad too dry and spicy to be perfect… Well, let’s not be picky here, looking at this whisky, you can’t question the greatness of Highland Park – delicate, beautiful, complex… Simply world class.
