Whisky Review: Signatory Vintage Caol Ila 1983 Aged 31 Years (Cask Hand Picked By The Whisky Exchange)

Style: Fruity and Dignified

Nose:
Refreshing and light-hearted fragrance on the nose. Black pepper and sea spray followed by balmy lemon tea. Stew fruits reduced to puree sweetness, almost winey at times. Subtle tropical fruits and apricots. Another whiff of distant sea breeze fluttering through touches of peat smoke. Sweet, balmy and peppery. Very nice.

Palate:
Stewed fruits step up on the palate. Fragrant lychee tea steamed by peat smoke. Elements delicately knitted together, ester fruits leading the way, a hint of banana and cooked lemon. Subtle pineapple and chocolate figs sneaking in. Smoke and brine playing a minimal role here… Herbal, peppery spice revealing overtime towards the back of the palate. Smoke, honey oak dips in softly. Beautiful palate.

Finish:
Coal ambers, touches of peat supported by thinned honey. Aftertaste of ice lemon tea, malt syrup simmering within.

Thoughts:
Great example of how flavours amalgamate when the spirit reaches a ripe old age. All elements are perfectly integrated. Cooked fruits and fragrant sweetness, gently lifted up by herbal touches and peat smoke. Delicate and graceful. Exceptional dram.
